Seasoned lemon beef

Today we are going to take a look at making a very easy dish that uses relatively inexpensive beef but that comes out fork tender and full of zesty, spicy lemony flavour.

Anyone can make this dish with minimal prep time.

To begin, you want to use about 2 pounds of cubed stewing beef.

Place the beef in a large bowl and toss in around a tablespoon and a half of olive oil and a tablespoon of soy sauce.

Then toss in the following seasonings and ingredients:

1 large diced onion

2 tablespoons garlic powder

1 tablespoon paprika

1 tablespoon cayenne pepper (or to taste)

sea salt and black pepper liberally (or to taste)

1 or more Red Thai hot peppers unseeded and diced

The more cayenne pepper and hot peppers you add, obviously, the spicier the dish will be.

Let the seasoned meat sit at room temperature for 30 minutes to an hour.

Meanwhile, cut three lemons into think slices being sure to remove any seeds. Line the bottom of a casserole dish with a layer of these slices.

Place the seasoned beef, hot peppers and onions on top of these lemon slices.

Then top the beef with another layer of the sliced lemons.

Place in an oven, uncovered, preheated to 400 degrees and cook for 90 minutes.

After 90 minutes remove from oven, remove the top layer of lemons and let sit for 10 minutes.

This delicious dish is terrific served with an Asian style salad, rice and/or egg noodles.

One variant is to replace the lemons with orange slices.

Enjoy.
