Today we are going to look at recipe for a spicy shrimp, pork and bok choy stir fry simmered in a peanut satay sauce.
This dish is perfect served atop rice or ramen noodles and topped with various garnishes.
Ingredients:
2 pounds of pork loin cut into strips
20-30 jumbo cooked shrimp, fresh or thawed
3-4 baby bok choys roughly chopped
1 bottle of peanut satay sauce (President's Choice, Thai Kitchen and other brands make them)
1 tablespoon grated ginger
2-3 diced bird's eye chilies unseeded
salt and pepper
chopped fresh cilantro
chopped green onion
chopped Thai basil
sesame seeds
olive oil
About 20 minutes before cooking take out your pork slices and season liberally (or to taste) with sea salt and black pepper.
In a large saucepan or wok heat some olive oil over medium high heat and then add the pork slices. Cook the pork stirring regularly until just cooked through, around 5-7 minutes. Remove the pork and set aside.
Add the bok choy and a little more oil and sauté for around 5 minutes until soft. If you wish you can also season the bok choy with salt and pepper.
Add the satay sauce, grated ginger and bird's eye chili. Bring to a simmer and simmer for around 3 minutes.
Add the shrimp and simmer for another 2-3 minutes. Then add the pork back in and simmer 2-3 minutes more, stirring regularly.
Serve atop rice or ramen noodles and garnish with the cilantro, green onion, Thai basil and sesame seeds
Enjoy with a chilled dry white and some lime wedges and hot sauce on the side.
